Inzalo and Four Seasons collaborate on Premium Agave-Inspired Dining Experience

South Africa's fine dining scene continues to embrace local producers, with luxury hotels increasingly creating intimate culinary experiences that showcase homegrown craftsmanship alongside world-class cuisine. The latest example comes from Four Seasons Hotel The Westcliff Johannesburg, which is partnering with award-winning agave spirits producer Inzalo for an exclusive one-night-only pairing dinner on 31 July.


Hosted in the hotel's Yellow Room, the event forms part of Four Seasons' ongoing producer-led dining series, which connects guests with leading South African food and beverage producers through carefully curated tasting menus and expert pairings.


Executive Chef Rudi Liebenberg has designed a multi-course menu around Inzalo's portfolio of small-batch agave spirits, pairing each dish with a different expression to highlight the relationship between flavour, craftsmanship and provenance.



Unlike many commercially produced agave spirits, Inzalo focuses on minimal intervention production. The spirits are crafted from wild agave grown in the ancient marine soils of the Western Cape before being produced in limited quantities using spring water and wild yeast. The agave is hand-harvested, slow-cooked and rested in oak, creating expressions that have already attracted international recognition despite the brand's relatively recent arrival. Liebenberg says the appeal lies in the spirit's authenticity and strong sense of place.


"What drew me to Inzalo is its authenticity," he explains. "It's a spirit that expresses where it comes from, naturally embraces a unique heritage and exceptional taste, all of which gives us an exciting foundation from which to create." Rather than treating the spirits as an accompaniment, the menu has been built around them.


"Each course has been developed around the character of a specific expression," Liebenberg adds, resulting in "a dining experience that is distinctly South African while reflecting the creativity and precision our guests expect from Four Seasons."



Guests will begin the evening with canapés, including oysters with Inzalo ceviche and tuna tartare cigars, paired with a Batch One cocktail. An amuse-bouche of yellowtail aguachile with citrus, avocado and coriander follows, served with Inzalo Batch One either neat or over ice before the dinner transitions into a series of exceptionally limited single-barrel expressions.


Each of those single-barrel releases has been matured in a different cask, with production limited to approximately 160 to 350 bottles per barrel, offering guests an opportunity to experience some of the country's rarest agave spirits alongside a bespoke tasting menu.


The collaboration also reflects a broader shift within South Africa's hospitality industry, where luxury hotels are increasingly using chef collaborations and producer partnerships to showcase local ingredients, beverages and artisanal craftsmanship rather than relying solely on imported luxury brands.



Following the Inzalo dinner, Four Seasons Hotel The Westcliff Johannesburg has also announced the remaining events in its 2026 producer-led dining series:


  • 28 August – In Her Element: A Women's Month dinner featuring a curated menu paired with premium wines.

  • 23 September – Spring with Babylonstoren: A seasonal menu celebrating honey-inspired flavours alongside Babylonstoren wines.

  • 24 October – Effervescence with Moët & Chandon: An evening dedicated to Champagne and refined food pairings.

  • 27 November – Wasted. Reimagined: A sustainability-focused dining experience centred on innovative zero-waste cooking.

  • 3 December – Summer with Babylonstoren: A showcase of heirloom tomatoes at the height of the season.


Reservations for The Spirit of Inzalo Agave dinner are available for 31 July at R1,750 per person, including food, spirit pairings and gratuity.
